You stay focused on the drinks you are making and ask for support from your colleague who is more inclined to handle this type of situation.
Without interrupting your service, you talk to one of the guy's friends explaining that you cannot serve his friend a drink. Alternatively, you offer him a non-alcoholic cocktail.

You focus on the drink you are preparing ignoring the “smart fellow”. When you are working, only cocktails deserve your attention.
You immediately address to your customer, and very politely, you ask him to queue as anybody else.
You know this kind of customer. Better to act as if nothing has happened and, when his turn comes, to astonish him with an exceptional cocktail.

…extremely important. Every drink must be served in the proper glass to enhance the drinking experience.
…overestimated! I usually prefer to use a similar glass for all drinks. In this way, I save time and can give more attention to the liquid than to the glass.
…quite an issue. I use special glasses only when I want to “impress” a very demanding customer. Usually, I use traditional cocktail glasses.

It is essential to fill the glass with ice to prevent it from melting too quickly, which would spoil the taste of the drink. This is not up for discussion.
You immediately agree to his request. You cannot interrupt your service just to discuss customers’ requests.
You explain why it is so important to fill the glass with ice. You know what he expects: a perfect cocktail.
